Chicken Sausage with Peppers and Rigatoni

1 lb. of chicken sausage, cooked, fried cooled and sliced, 1 large onion (sliced thin),
1 large red pepper (sliced thin),
1 large yellow pepper (sliced thin),
1 large green pepper (sliced thin),
1 cup diced plum tomatoes,
1 cup chicken stock,
1 tablespoon chopped garlic,
1 teaspoon oregano,
1 teaspoon black pepper,
2/3 cup extra virgin olive oil,
4 tablespooons grated Romano cheese,
1/2 lb. cooked pasta.

Sweet and Sour Chicken
(Mary Grey)
1 pkg. (2-1/2 lbs.) boneless thighs,
10 sprinkles of soy sauce,
1 - 4 oz. can unsweetened pineapple juice,
3 - 4 cloves of garlic,
4 oz. white vinegar,
14 oz. bottle tomato catsup.
Marinate 24 hours before baking,
Cut up each thigh into 4 peices,
Place in bowl, mince fresh garlic and add remaining ingredients to chicken,
Cover and place in refrigerator for 24 hours,
Take out of bowl and put into baking pan,
Place in pre-heated oven at 350 degrees F for 1 hour,
When fully cooked, the juice from the pan may be used to pour over rice.
